As Singapore celebrates six decades of nation-building, one passionate local is ready to serve up more than just good food—he’s dishing out love, unity, and a generous helping of heritage. 

Antonio Tay, once a humble hawker boy, now chef-owner of Oasis Hideout, is bringing his culinary flair to the table in celebration of SG60. His secret ingredient? A deep love for the Little Red Dot he calls home.

Through his food, Antonio hopes to reinforce civic pride and a sense of belonging to this country he is proud to call home.

Antonio Tay simmered over how he would be able to create something truly meaningful for his customers to enjoy this National Day. 

Drawing on his culinary heritage as a second-generation hawker who has taken over the running of his family’s hawker business, Antonio knew that he wanted to craft a memorable meal for Singaporeans to enjoy as a family.

“Being a father seasoned me with responsibility,” Antonio explains. “I now understand how important it is to bring people to the table—literally and emotionally. Being Singaporean, we often take for granted the rich tapestry of food that we have from so many cultures. Often, we even blend the foods from different cultures. Over 60 years, we have learnt to break bread together, setting aside boundaries to live and dine harmoniously. It was this harmony that I wanted to highlight, which inspired me to create the ‘Harmony Platter’.”

The Harmony Platter is Antonio’s labour of love to a nation seasoned by diversity and served with a side of unity. Each dish is a bite-sized tribute to the cultural flavours that make up Singapore’s rich food tapestry.

“The hawker centre is Singapore’s dining table,” Antonio says. “No matter your background, we all find our comfort food there. And that’s what I wanted this platter to be—comforting, nostalgic, and proudly Singaporean.”

In this medley of harmony representing the four main cultures of Singapore, Chinese roots are celebrated with:

  • Sautéed Cabbage Chinese-Style – fresh and homely with just the right tinge of ‘wok hey’.

  • Har Cheong Chicken Popraage – a playfully spiced twist with a prawn paste punch.

  • Sweet and Sour Fish – a tangy crowd-pleaser from every economy rice stall.

While Malay cuisine is represented by:

  • Merah Goreng Ayam – chicken fried in red batter

  • Beef Rendang – a beef stew-like dish; and Satay Skewers of chicken, beef and prawn served in a Western style.

Indian culture is celebrated with:

  • Masala Curry Barramundi (or Masala Curry Chicken) – spicy, with a dash of the Oasis Hideout flair.

And as egg is a universal ingredient that serves well as a dish of its own, the Universal Omelette is included to symbolise the rest of the cultures that contribute to Singapore’s unique population composition. 

All dishes will be served with Nasi Lemak Pandan (rice cooked in grated coconut milk with pandan).

This SG60 promotional platter, designed to generously feed a family of four, is priced at S$60 nett (usual price S$89), and consists of: Nasi Lemak Pandan, Sautéed Cabbages, Har Cheong Chicken Popraage, Merah Goreng Ayam, Sweet and Sour Fish and your choice of Masala Curry Barramundi or Masala Curry Chicken. 

Additionally, customers have the option to enhance their meal with add-ons such as a Skewer Set, Beef Rendang, the Universal Omelette, and additional rice.

The Harmony Platter will be on promotion from July 16 until September 30 2025.

Oasis Hideout – A Special Blend of Western and Asian Flavours of Hawker Heritage

Oasis Hideout’s regular menu is a special blend of Western and Asian flavours developed partly due to Antonio’s hawker heritage. It includes dishes like the ever-popular Laksa Seafood Pasta and Tom Yam Seafood Pasta.

Consisting of over 100 items, Oasis Hideout offers customers almost as much variety as a hawker centre, with dishes served diner-style next to the swimming pool.
