When Yang Li came to Singapore, she did not expect that her culinary philosophy would change. The Chinese food that she was used to back home, had taken on new personalities, that while familiar, were also starkly different in terms of flavour profiles and character. Having worked on standardizing flavour parameters to maintain consistency of taste across cities for a chain of dining outlets, she soon realized that Singapore has its own unique story to add to global cuisines due to its cosmopolitan, yet Southeast Asian entrenched culture. She decided to undertake the mission of encoding the freshness of Cantonese, Italian, French and Japanese cuisines with Southeast Asian spices, allowing local ingredients to tell the story of home.

After three years of intensive research and experimentation, Yang Li launches not just one, but two restaurants, confidently displaying her expertise in encoding flavours to create exceptional menus that are at once familiar, yet pleasantly different tantalising one’s tastebuds, memories, and entire dining experience where every dish on the menu is a dialogue of flavours.
“From controlling flavour to fostering dialogue, this is the deeper logic of deliciousness that I learned in Singapore,” says Yang Li, owner of Da Hock Pte Ltd, who owns both Chef Wen (Chinese Noodles and Dishes) and Daily (Fusion Cuisine).

Chef Wen serves a range of Chinese dishes from across China, handpicked by Yang Li, for their ability to pair well with Southeast Asian spices to create exclusive flavours unique to Singapore. She proudly calls her restaurants “the launchpads of exclusive flavours debuting in Singapore”. Signature dishes such as Beef Skewers with Xinjiang Naan, Garlic Butter Sea Bass and Typhoon Shelter-Style Fried Pork Ribs allow diners to enjoy the cohesion of local and Chinese spices.

Next door, Daily serves up an impressive range of Italian, French and Japanese dishes that similarly draw upon local flavours and inspirations to create. The chef’s original Fujian Shacha Prawn Pasta is a standout creation, while the sourdough selections feature inventive toppings like Roasted Shredded Chicken and Spicy Beef Red Cabbage. Daily’s pizzas from the Neapolitan oven boast unique flavours like the Spicy Beef and Basil Pizza, an east-west combination that follows Yang Li’s philosophy of creating dishes that tell their own stories of their towns and cities.
Yang adds, “By integrating local food culture, Singapore has created a cuisine and culture that is both traditional and modern, yet highly adaptable. It proves that traditions can cross borders and take root in new ways. Through these dishes, we hope Singaporeans can rediscover their connection to heritage and spark new conversations.”
